Much like the divergent regions of the Tar Heel State have given way to their own styles of BBQ, different parts of Texas have their own take on the meaty matter. But unlike North Carolina, most Texans consider beef — not pork — to be barbecue, and it’s often slathered in a tomato-based sauce.
To that end, the closest thing you’ll find to Texas-style BBQ around these parts is at the food truck Poor Piggy’s (www.poorpiggys.com), which serves beef brisket, including a plate called “Texas Piggy” (that actually contains no pig at all), in its roving mobile unit, which you can keep up with at www.facebook.com/PoorPiggys.
However, if you’re from the Lone Star State you’re not likely to consider it truly authentic in the way that one Texan recently described it to me:
“The really legit places serve on brown paper (no plates) with bread, hunk of cheese, onions, pickles. With only a knife for a utensil.”
But perhaps it will do.
