If you’re just looking to make a few bottles for personal consumption, you’re in the clear, according to Karen Gregory, a compliance specialist with the N.C. ABC Commission.
Gregory said a meadery is classified as an unfortified winery under North Carolina laws and that an individual could produce up to 200 gallons per year per household without a permit. The mead can be given to friends and family, but it can’t be sold.
If you want to make more than 200 gallons, you’ll need to apply for state and federal permits, which are available here.
